be exposed to all the crayfish and crayfits services in their respective docker-compose files?

Should we add those to these services https://github.com/Islandora-Devops/isle-dc/blob/development/docker-compose.crayfish.yml and https://github.com/Islandora-Devops/isle-dc/blob/development/docker-compose.crayfits.yml
and/or should be their own prefixed variables like CRAYFISH_PHP_MEM...
The only affect https://github.com/Islandora-Devops/isle-dc/blob/development/docker-compose.drupal.yml#L20-L23
