I too tried to package jupyter-book, and I realized after a while that there are tons of new python packages to add as dependencies. Plus, I stumbled upon some issues upstream, example:
I won't continue working on this. The work left to be done, besides waiting for upstream to release a new version of myst-nb and fix the nbclient tests failing, is to package the commented out packages in jupyter-book/default.nix.

I've tried to package this myself, just to get a development shell working, but I think this is beyond me, in terms of complexity.
