Retag 6.1.0 to remove Shopware 6.5 compatibility

I assume the 6.1.0 is incompatible to Shopware 6.6. as well, therefore it would be great if you remove the tag and retag a version which contains a proper composer.json, so composer doesn't pick up the wrong version which doesn't work :-)

Hello, the 6.1.0 version of the plugin is compatible with SW6.6 but there was a small bug inside so we recommend to use 6.1.2

Sorry, right title, wrong comment. @jvarelmann Currently the 6.1.0 contains compatibility with 6.5(!) so if I composer req $payone_sw6_plugin I get 6.1.0 which doesn’t work 🥴

To fix this we need to change this compatibility to 6.6 so composer doesn’t install accidentally 6.1 because it assumes it works, which is not the case
