- 1kg chicken leg/thigh/wings
- salt & pepper
- Olive oil
- 1-2 yellow onion
- 50ml white wine
- 200g crame fraiche
- 15ml strong mustard
- 15ml whole grain mustard/mustard seeds
- fresh chopped parsely for topping

Dry chicken with paper towels.

Sprinkle the chicken with salt and pepper

Heat olive oil in a large steel/cast-iron skillet over medium heat.

Place the chicken in the pan in one layer, skin side down.

Fry over medium heat for 15 minutes without moving, until the skin is golden brown.

Turn the chicken pieces

Add the onions to the pan

Cook over medium heat for 15 minutes, stirring the onions occasionally until onions are browned.

Transfer the chicken, not the onions, to a plate and allow to rest uncovered

Sauce: Mix wine, creme fraiche, mustard, and salt to taste.

Add to the skillet and stir over medium heat for one minute.

Return the chicken, skin side up, and the juices to the skillet.

Plate with parsley, and serve hot.
