I'm having the same problem. After some searching it kinda looks like the Electrum Knife is missing and the forge tag that adds the Electrum Knife to forge:tools/knives points to the missing item. I removed the tag from the .jar file and everything seems to work again.

Edit: Removing it didn't work. I ended up re-adding all my knives to the tag using CraftTweaker.
Edit 2: It seems the tag farmersdelight:straw_harvesters is also broken because of this.
