Feature Request: Include email in fieldMapping

Summary of the new feature / enhancement

As developer of a connector, I want the default field mapping configuration to include an example email field with a complex mapping, so that I can easily implement email fields in my project.

Current Situation:

The current default field mapping configuration does not provide an example on how to include and handle email fields with a complex mapping. However, since email fields are common within most systems, an example would be helpful.

Proposed Changes:

Add Example Email Field to Default Field Mapping:

• Introduce an example email field in the default field mapping configuration.
• Ensure the example uses a complex mapping and the Active Directory email address.
