Since Ubuntu 14.04 has reached the End of Life, is it possible to install the servers on a more recent version of Ubuntu?

Thanks for the heads up, that would be a good thing to do. It should be possible, though there are most likely many small changes that would be required in the Ansible playbooks. I'll raise this as a potential future task to work on.
