If you are using the command line, you can pass the --new-instance option to open a new sioyek instance. Alternatively, you can set new-instance 1 in your prefs_user.config to make this is default behaviour.

Also in new version of sioyek we have added a --new-window command line option as well as a new_window command within sioyek itself which is more efficient than new-instance. It is not available in 1.3.0 release though, so you have to compile it yourself or use the preview builds here:
