eksctl install instructions invalid #6696

The current manual Linux install instructions for Linux are invalid. EKSCTL changed homes to github/eksctl-io

These instructions, https://anywhere.eks.amazonaws.com/docs/getting-started/install/

Need to be updated to match these instructions
https://eksctl.io/introduction/#for-unix
