Central package management reduces the ceremony needed for managing packages and allows

transitive pinning (implicit) which is especially useful if you need to upgrade transitive dependencies e.g. due to CVEs
global references (e.g. for analyzers)

Although CPM has a few drawbacks, like not all tooling (yet / fully) supporting CPM (see e.g. spectresystems/snitch#39, https://youtrack.jetbrains.com/issue/RIDER-114654/Cannot-upgrade-GlobalPackageReference-packages), I've used it for a while now and don't want to go back.
