Add some form of APM with Log and Error aggregation service

I'd ideally like to have an all-in-one service rather than several. New Relic does error tracking,
log aggregation, and is a fantastic APM, so I'd be open to setting it up.

Doing some reading, it does appear that uptrace could be a very viable open-source option which would mean we could just plonk it in our docker-compose and not worry about tying my projects or other people into a paid service.

Would be interested if there were any other thoughts on the matter.
