Pork Belly Lollipops

A sweet, smokey, and savory pork belly treat.

Ingredients

  • 4lbs Pork Belly (Preferably from costco)
  • 1 Bottle Chik-fil-a Polynesian Sauce
  • Any sweet rub
  • 1/4-1/2 bottle red wine

Tools

  • Knife
  • Smoker/Treager
  • Foil and Aluminum Pan
  • Skewers

Steps

  1. Cut the costco pork belly in half and score along the fat cap
  2. Place pork belly pieces onto skewer and cover in rub, let sit in fridge for at least 30 min.
  3. Preheat smoker to 170-180, smoke pork belly until temp reaches 160 F
  4. Combine 3/4 bottle of polynesian sauce and 1/4 bottle of red wine in a small bowl
  5. Remove pork belly from smoker, increase heat to 275
  6. Place pork belly in aluminum pan and pour sauce/wine mixture over the pork belly. Cover pan in foil and place on smoker for 1-1.5 hours
  7. Remove pan and place pork belly back on smoker while basting remaining polynesian sauce (not mixture) onto pork belly and cook until glaze thickens and carmelizes
