A sweet, smokey, and savory pork belly treat.
- 4lbs Pork Belly (Preferably from costco)
- 1 Bottle Chik-fil-a Polynesian Sauce
- Any sweet rub
- 1/4-1/2 bottle red wine
- Knife
- Smoker/Treager
- Foil and Aluminum Pan
- Skewers
- Cut the costco pork belly in half and score along the fat cap
- Place pork belly pieces onto skewer and cover in rub, let sit in fridge for at least 30 min.
- Preheat smoker to 170-180, smoke pork belly until temp reaches 160 F
- Combine 3/4 bottle of polynesian sauce and 1/4 bottle of red wine in a small bowl
- Remove pork belly from smoker, increase heat to 275
- Place pork belly in aluminum pan and pour sauce/wine mixture over the pork belly. Cover pan in foil and place on smoker for 1-1.5 hours
- Remove pan and place pork belly back on smoker while basting remaining polynesian sauce (not mixture) onto pork belly and cook until glaze thickens and carmelizes
