How do you change system date/time? It just immediately changes it back to host date when changing in control panel (Basilisk II)

You change the system time on the host. Why do you want to change it through the emulator?

I was installing old software in which the functionality was based on system date (it ceased to function after a certain date). I would like to be able to change the system date in the emulator rather than having to set my host system date back to the 90s, which causes all sorts of system issues.

The kanjitalk755/macemu fork (ready build downloads from emaculation forum) has a prefs item where one can set the date within the emulator to any number of years and/or days in the future or in the past.
