Tab "Appearance", section "Player", called "Forced theater mode".
This one works as soon as I toggle it, but does not persist. When enabled and a open youtube page is switched to "Theater mode" and I close the browser and reopen it, it's non-theater again. The toggle button is set to "on". I have to toggle "off" and "on" again to get the change.

But this way of doing is so broken I can't use it, I have less mouse clicks when I just always toggle it manually inside the youtube video.

I did some manual testing on chrome 127.0.6533.73 (fresh install). It worked fine theater mode was persistent.
Test1: Close tab and reopen a new one.
Test2: Quit the app completely and open a new tab.
Both of them were done multiple times.

Addition info could be helpful like. Browser name, Version and maybe OS.
You could also try clearing up the browser data or reinstalling the extension. @Gordon-Dry
