Add support for index.mapping.source.mode

elastic/elasticsearch#114433 introduced a new setting called index.mapping.source.mode. index.mapping exists in the specification under the MappingLimitSettings name, but source does not exist yet. We could add the logsdb plugin to the recordings to see the failure, too.
