Update Salesforce Mobile SDK from 6.1 to 11/12 for Native iOS App

We are currently working on a native iOS app that is using Salesforce Mobile SDK version 6.1. The codebase is quite old, and as such, there may be legacy configurations or compatibility issues. Given the advancements and improvements in newer SDK versions, I am planning to update the SDK to either version 11 or 12 to ensure the app remains up-to-date and compatible with the latest Salesforce features and security enhancements.
