add backups to gitlab example

Our existing gitlab example doesn't demonstrate how to include backups (to S3). We should include this as that is expected for production and a requirement for any use of this setup in real-world scenarios.

Requirements

• update the gitlab example to include the configuration and resources needed to send gitlab backups to S3
• review the methods available and propose a way before actually implementing it
