EPIC: Log integration into Grafana using Loki

As a Block-Node operator
I want to have access to the logs of the application
To accomplish that we need to enhance our current Observability Stack to include logs to the existing included grafana stack.

For this we need to include Loki on the current Stack and auto-configure it to the current Grafana and Observability Stack.
