My naive solution 3 months ago was to remove the NTFS partition in KDE Partition Manager, extend ext4 "home" and call it a day.
Now it backfires on me when I update SteamOS this morning, it automatically boots to that corrupted Windows.
I managed to boot into SteamOS from file in boot manager

This is because the EFI boot files are still present on the /esp partition. You need to also delete the /esp/efi/Microsoft folder.
