Hello,
I have the exact same setup as you did in your video, but my meassured temperature lags behind significantly.
My best guess is, that my thermocouple takes way to long to meassure the actual temperature because when i meassure with a laser theermometer the temperature is even higher than the set temp.

I hope you have a link or maybe another idea!

Maybe you share, what type you currently use? A small K-type thermocouple glued to a piece of FR4 is my reference probe.
Also note, that the reflective metal is not ideal (not a black body radiator) to be measured with non-contact IR thermometers but it should be lower not higher in temperature reading.
