I think it would need to be done in HeroChat, not SlackMC

If you mean on a technical level we currently use PurpleIRC which integrates with HeroChat, so technically it is possible.

SlackMC is mainly an API. I mean there should be a modification to HeroChat's code to submit slack messages if you want each HeroChat channel to go to another slack channel.
