[TESTING] - Consider a better demo app for monitoring integration testing

Description

The Context:
The project is currently providing a simple example app that exposes metrics and is maintained by someone on Github that is not an organization or a well-known entity. We've seen examples in the past of malicious takeovers of projects continuously happening without notification to consumers of said apps ( or libraries ) as an example.

The Solution:
Evaluate if podinfo is a better alternative as it is being used by the CNCF itself.

The Alternatives:
None is considered, but any idea is welcome.

Unable to test this at this time. When I run make ci locally it get stuck in a loop waiting for dex to become healthy. It seems as if dex is not configured correctly and I'm looking into what the underlying cause is and how to proceed

I was able to deploy podinfo and test the base endpoint (/). Will add further tests once I understand how to use subtests
