Create a subworkflow for functional analysis methods

Tasks

Some work is done in branch dev-ratio, now following the effort in #341, we want to:

• Clean the code for such subworkflow (it calls functional analysis methods like GSEA and gProfiler2)
• Add tests
• Add it to nf-core/modules as component

• Add TABULAR_TO_GSEA_CHIP to nf-core/modules modules#7200
