I think this project is a prime example for showcasing the power of documenting the rest api with spring restdocs. What do you think?

You can have a look at restdocs branch of this project. There is some stub of documentation and it is from March 2019.

Some official sample apps (smaller than restbucks through) is listed on official documentation, https://docs.spring.io/spring-restdocs/docs/2.0.x/reference/html5/#getting-started-sample-applications
