yt-dlp has bypasses for some of the age-restrictions (I believe there are 4 kinds) already.

Supports some (but not all) age-gated content without cookies

For the ones that don't work, the only solution would be to use the --cookies-from-browser feature with a valid, logged-in cookie for a registered user with a matching age in YT's preferences.
