Config Doc - Rename Maven plugin in experiment

Description

In #42677, we named the Maven plugin specifically to generate the config metadata.

We should instead use a generic name as it might be used for other purposes (with other goals).

We should start with quarkus-extension-deployment-maven-plugin and see where it leads us.
