The example suggests running this in ubuntu-latest, but under the covers relies on agvtool to set the versions for iOS, which is only available (as far as I know) on MacOS.

I'll be seeing if I can add functionality to set the version in the plist with sed instead so this doesn't have to run on more expensive MacOS runners.
