Is there a way to change the highlight color in the dropdown?

We have recently implemented dark mode on our site, and we were able to style most of Selectize CSS without issue. One thing I'm struggling to find is how to style the highlighted text, which highlights text in the select options based on what you have typed into the input. It is now white text on a white background (see screenshot), and I just want to be able to change the highlight color. Anyone know the best way to do this? Thanks!
