[DOC-62] Add new tutorials

Scope can be further determined, but some examples that highlight protocol integrations:

• Persisted file storage (aka Filecoin + CIDs in tables)
• FEVM smart contracts
• Encryption (Lit and/or Threshold)
• Something with AI / ML data in tables

Although not required as part of this issue, parts from these "large" tutorials should be added as "small" guides that get to the point and all the unneeded setup info or super specific content. Each tutorial will probably take a day or so of work, so split up this issue as needed.
