Migrate Camtrap DP to Data Package v2

Camtrap DP is currently based on Data Package v1. In June 2024, Data Package v2 was released, which has features that are useful but not critical to Camtrap DP. Once there is more software support for Data Package v2, it would make sense to upgrade to Data Package v2.

Useful features:

• Multiple roles per contributors: see Allow multiple roles for contributors #345. We would have to define Camtrap DP roles under roles not role
• Contributors don't require title and could be provided as firstName/lastName: see See effect of title no longer being required #376.
• Controlled vocabularies as labels + option to order them: see Make use of enumLabels, enumOrdered #349. For validation, it might still be good to also keep enum
• Version for sources: see Don't define version for sources (will be part of frictionless) #373. We would no longer have to define this in Camtrap DP.
• Data fields that are not used don't have to be present in the CSV (using fieldMatch): see Update documentation to indicate all fields need to be present in CSV #385
