Update query resolvers for employee users to not give as much info

Concurrently, we do a lot of client side filtering for posting/shift visibility which does not actually hide anything as we can see everything in the network log. We want to make sure the resolvers we are calling are no returning too much info. eg: postings,shifts query resolvers should only return scheduled and past postings
