Two parts:
Add the image/chart/version descriptors to the local and global env templates. That should be mostly safe, although there are a few occassions where currently different versions of the same service are used within the local deployment (e.g. prometheus-to-sd)
Update to recent versions. That's the risky part. I can report back after next deployment run with all the new stuff
