Ah, I wasn't sure if we wanted to actually do the more invasive step of renaming kernel configs around to remove -PURECAP suffixes and add -HYBRID suffixes instead. This is fine though. |

Adjust so that we default to GENERIC-MORELLO-PURECAP when doing manual builds. The new structure suggests we should make GENERIC-MORELLO be purecap and add -HYBRID kernels, but that's a proposition with much further reaching effects.

Corresponds to CTSRD-CHERI/cheribuild#389 for native builds, but this Morello-only as we don't build riscv kernels natively under emulation or on FPGA.
