root: releasing v5.0.1

It appears there where typo in the plainlanguage.gov url causing it
to become a relative URL instead of absolute one. Moreover, some
references from Zenodo is out of touch. Hence, let's
update the README.md and release v5.0.1.

This patch releases v5.0.1 for minor README.md corrections.
