We need some config file

This documentation shows how to use pydantic settings to read environment variable in a centralized way.

If we use pydantic's BaseSettings object as config file, it is backward compatible with our current setting.

This could be especially useful during testing, as it's very easy to override a dependency with your own custom settings.
