Fixes to mac compiler versions and freetype inclusion in the JDK21+ SBoMs (Bundled version in jdk11+ is 2.13.1)

Note to anyone that chooses to merge this when it gets approved - if you can kick off some runs of the download_and_sbom_validation jenkins job against the April releases and then "edit build information" on each run to indicate which is which that would be appreciated :-)
They ought to all go green based on my testing of it outside jenkins.
