# Homemade Spaghetti Sauce | ||

## Ingredients | ||
- 1 large onion | ||
- 5 cloves garlic | ||
- 1/4C olive oil | ||
- 36C very ripe Roma tomatoes | ||
- 6oz can of tomato paste | ||
- 4C chopped fresh basil | ||
- 2T oregano or to taste | ||
- 1/4 C sugar | ||
- 2T vinegar | ||
- 1/4-1/2C cookie Sherry[^2] | ||
- 2T salt | ||

## Steps | ||
|
||
1. Saute garlic and onion in olive oil. | ||
2. Chop tomatoes and basil in food processor and chop. | ||
3. Place all remaining ingredients with tomato/basil blend in sauce pan. | ||
4. Bring to boil. | ||
5. Reduce to simmer for 2hrs with lid on. Stir occasionally to reduce chance of sticking/burning. | ||
6. Remove lid and simmer for 2 more hours[^1]. | ||
6. [^2] Run some or all final cooked sauce in blender for smoother finish. | ||
