Motivation
The installation of foundry-up and the foundry tools was not respecting the XDG desktop base directory specification (https://specifications.freedesktop.org/basedir-spec/latest/)
Solution
Update the installation paths to respect the specification
I started by modifying the install paths for the specification but ended up also fixing various ShellCheck linting warnings as well as 2 likely uncaught bugs
