Add flag to use AI ServiceRegistry contract address for Livepeer AI Subnet

For the time being we're using a separate ServiceRegistry contract for the Livepeer AI Subnet. This PR introduces a flag to decide on using AI ServiceRegistry.

Here's a list of O and their Service URI difference between Livepeer Network and Livepeer AI Subnet.
