The next gen uses sdl3 for window management
FOR THOSE WHO READ THIS, use -DGAMEWINDOW_SYSTEM=sdl3 instead of building this PR. It's existence is currently only for (broken, metal) macOS test builds that have no external sdl3 toggle available
