fix(deps): update sanity and @sanity/client

We should be able to close these two issues after updating these dependencies:

• Feature Request: stega client option #130
• Version 3.0.0 breaks on Studio refresh, also prevents applying Presentation, also still uses out-of-date Studio in apps #154

@sanity/ui was removed since it's unused.
